Ingredients

340 g Nomix gluten-free flour
60 g fine corn flour
130 g powdered sugar
160 g fat (butter, Hera)
1 large egg
80 g milk
100 g plain chocolate
6 g baking powder
(1 TSP ground ginger)

 

How to prepare

Let the chocolate soften on a water bath. If possible, choose higher percentage chocolate (75 %). It will make the cookies more prominent in taste. Beat the softened fat, egg and sugar for a while and gradually add the flours mixed with the baking powder and milk. Lastly, add the softened chocolate (not hot). If you wish to make the dough more zesty, you can add ground ginger. Someone might prefer a pinch of chilli. Let the dough stand for about 30 minutes. Prepare the cookies using a cookie press or a similar device. Bake at 170 °C for 18-20 minutes.
