Ingredients

1 smaller courgette
1 whole egg
ca. 120 g feta goat cheese 
or Balkan cheese
1/2 cup (70 g ) Nomix gluten-free flour
1 clove garlic
salt
pepper
savory, parsley
Nominal corn flake crumbs or corn flour for breading

How to prepare

Grate the courgette on a coarse grater and “squeeze” the juice out of it. Add the grated cheese, eggs, crushed garlic, flour and the chopped herbs. The savory is not essential, but its leaves go extremely well with the dish. Season with pepper and carefully with salt. The Balkan cheese will make the dish quite salty by itself. Knead the dough and let stand for 15 minutes. 

Fry the small pancakes on heated fat (I recommend for example ghee). Create them in the following manner. Place a small pile of dough into corn flake crumbs or flour and use your hands to form a small breaded pancake (about 4-5 cm diameter).

Tip: Serve with various vegetable salads. Some dressing cannot hurt the pancakes.
