Ingredients

400 g Nomix gluten-free flour
220 ml (g) water
1 whole egg and 1 yolk
60 g sugar (incl. vanilla)
40 g oil
16 g fresh yeast
3 g salt
1-2 TBSP rum
2-3 g baking powder (not necessary,
but it will make them more brittle)
grated lemon peel

 

How to prepare

The American variation ever so often finds its way onto the shelves of our shops. You can also prepare them for your children at home.

 

You can mix the dough in a home bread maker. Pour the hot water into the bread maker bowl and crumble the yeast into it. Add the oil, sugar, eggs, flour, grated lemon peel and salt. Wait 10 minutes before adjusting the consistency. The Nomix ingredients will swell up. Let the dough stand for about 5 minutes and process immediately after. It is easily shaped on a non-sticking, slightly greased surface (e.g. kitchen countertop with greased palms.

 

Use a piece of the dough (ca. 70 g) to form a ball as if you were making a cookie. Make a hole (at least 3 cm) in the middle using your finger creating a circle. The hole will shrink once the dough has risen. Fry the risen circles and dry them once fried. Further processing is up to you. You can just coat them with powdered sugar and cinnamon or you can prepare elaborate glazing (sugar glaze, chocolate,…)
