Extrusion is a relatively simple food processing technology. It takes place in a machine called extruder. Carefully selected starchy materials (grain crops) are slightly moistened when fed in. The raw ingredient is moved and pressed by two turning screws in the extrusion barrel towards the exit hole (extrusion die), whereby the ingredient gets intensely kneaded, heated, the starch agglutinates and the proteins are denatured. The combined application of pressure, heat and mechanical sheer forces plasticises the fed raw ingredient and creates a dough-like substance. When exiting the extruder, the substance passes through the extrusion die. The decompression and rapid moisture evaporation enable expansion which creates a fragile porous substance (puffs). Those are milled into specific granulation according to the requirements.

 

The extrusion process provides the flours with new technological properties which simplify and accelerate the subsequent production or preparation. The starch in the extruded flour is processed in such manner that it takes in water even when cold. The flour has already been heat treated, therefore it is not necessary to cook it. 

 

Adding an ingredient processed in this manner can affect not only the final product density but also its shelf life or suppleness.

It has been heavily disputed, whether these ingredients are healthier or more tasty than the conventional ones. What we can state with absolute certainty is that the BIO products have always been produced with due respect for the environment. There is no room for synthetic fertilisers, pesticides or any other substances damaging the environment in ecological agriculture. There is a controlling system in place ensuring that certain rules are followed both by the raw ingredient producers and by the processors in their bio plants.
