Fruit crumble cake served hot is a fantastic dessert to use when returning from a proper winter walk, when you are frozen to the bone and searching for something sweet to compliment your coffee.

 

Ingredients

Streusel topping:
100 g Nominal wholegrain 
spelt flour
70 g ground brown cane sugar or powdered sugar
70 g coarsely milled nuts or whole almonds
70 g butter
50 g fine oat flakes
1 TSP cinnamon
a pinch of salt
Fruit part - apples:
500 g tasty sweet and sour apples
lemon with no chemical treatment
60 g raisins
some rum
1/2 TSP cinnamon
flat TBSP corn starch
sweeten to your liking, the streusel and apple sugar may suffice for someone
Fruit part - plums:
600 g pitted plums
1 BIO lemon (3-4 TBSP juice + peel) - you can swap it for orange
1/2 - 1 TBSP corn starch
1-2 TSP cinnamon
1 package vanilla sugar
you can add some alcohol

How to prepare

Prepare the streusel topping by mixing all the dry ingredients together and use the butter to connect them creating a powdery, chunky substance.

 

Dice the apples and pour the lemon juice over them adding the peel as well. Wash the raisins and if you wish, you can soak them in the rum for a couple of hours. Or add the rum at the last moment straight into the fruit substance. Heat everything in a pot stirring thoroughly. It is possible to add sugar or vanillin sugar. Mix the corn starch in some cold water and pour it into the fruit substance. Boil everything together for a moment adding the cinnamon and spread the resulting substance over a greased baking tray. Cover the surface with the prepared streusel topping. 

 

You can prepare the plum fruit part cold.

Quarter the plums mixing them with the cinnamon, vanilla sugar and starch mixed in some water. Add the lemon juice, grated peel and possibly 2-3 tablespoons of alcohol. Mix it well and spread evenly across the baking dish or multiple smaller ones. Cover the surface with the streusel topping.

 

Bake the crumble cake in a large baking dish or multiple smaller ones. Bake it at 180 °C for about 35 minutes.

 

Serve the dish hot, but you will enjoy it cold as well. You can add a scoop of vanilla ice cream or some whipped cream.
