Ingredients

Dough:

480 ml milk
270 g Nominal wholegrain spelt flour
60 g fine oat flakes
3 eggs
salt - a pinch for each egg
6 TBSP white yogurt - Greek type
25-30 g cane sugar or         3 TBSP honey
6 g baking powder
3 TBSP virgin flaxseed oil -  From the Barn
you can add lemon peel

Finishing:
fruit purée
ca. 200 g fruit
1 package vanilla sugar
1 TSP corn starch
cinnamon

whipped curd cheese with flaxseed oil
250 g half fat or soft curd cheese
3 TBSP virgin flaxseed oil -  From the Barn
you can sweeten with honey
more flavourings: yogurt, maple syrup,

honey, nuts, almonds, seeds, fruit, chocolate

How to prepare

Whip the whole eggs with milk adding the sugar or liquid honey, salt and yogurt. Keep whipping and gradually add the flour, oat flakes and baking powder. Add the oil last. Let the dough stand for about 30 minutes to allow the fine flakes to soak. 

You can process it even a couple of hours later.

Heat up and grease the waffle iron (before the first waffle will suffice) with ghee (clarified butter) for example. Then proceed to making the waffles. Cook each waffle for about 4 minutes (depending on the form size). Decorate the ready waffles to your liking and serve them while still hot. 

 

 

Tips from our table:

 

1. Waffles + apricot purée + almonds

Boil the sliced apricots with vanilla sugar and a tablespoon of water. Thicken the soft apricots with the corn starch mixed in some water. Use the water to adjust the thickness. Fine-tune the taste with the cinnamon.

 

2. Waffles + small garden fruits + maple syrup

 

3. Waffles + banana + grated chocolate + coconut

 

4. Waffles + whipped curd cheese with flaxseed oil inspired by Mrs. Budwig

 

5. Waffles + white yogurt + honey + chopped nuts
