Prepare delicious gluten-free fried doughnuts to delight both small and big sweet-lovers! This recipe is great for anyone who wants to taste classic sweet treats without worrying about gluten. The mini doughnuts are fluffy, soft, and you can fill them with your favourite fillings such as jam, vanilla cream or chocolate.
The dough can be mixed in a home bread maker or a food processor. In this case, pour the warm water into the bottom of a bowl, crumble the yeast into it, add the oil, sugar, eggs, flour, grated lemon zest and salt. Stir. Adjust the consistency after 10 minutes, once the NOMIX ingredients have risen. Let rest for about 5 minutes and process immediately. It is shaped readily on a non-stick lightly greased surface with slightly greased palms.
When preparing the doughnuts, don't roll out the dough or cut out circles, just divide the dough into smaller pieces (about 70 g) according to the size of the doughnut. Press each piece with the palm of your hand and put a little apricot preserve (stiffer) on top. Wrap the dough. Place the balls on a greased baking tray, flatten slightly and let rise. Place the risen ones in hot fat. Its temperature should be such that they fry for 4 to 5 minutes. Remove and dry with a paper towel. Sprinkle with powdered sugar. A less laborious option is to fry the doughnuts unfilled before cutting them open and filling them with the preserve or vanilla cream.

Almond mini doughnuts variation
Rinse and dry a handful of raisins (for adults, you can also soak them in wine or rum for a few hours). Add a handful of coarsely ground almonds and raisins to the base dough. If the raisins are wet, you can add a little more flour. Shape the rested dough into balls. Once fried, sprinkle with sugar.
Bavarian fried doughnut variation
Prepare them just like the doughnuts, but leave a pit in the middle. It will remain there even once fried (and won't be as golden as the surrounding dough). When dry and still warm, decorate the top with, for example, creamed curd cheese and plum spread.
