Spelt Orange Star Cookies

Soft orange-glazed star cookies are delicate biscuits that hold their shape, smell wonderfully of citrus, and thanks to the flaxseed have a pleasantly soft, tender crumb. Let the dough rest for at least an hour, then roll it out thin, cut out star shapes, and bake briefly until golden. Finally, decorate with orange icing and half an almond—and you’ll have elegant cookies perfect with coffee or for a festive table.


  1. Finely ground flaxseed is mixed with hot water and left to cool.
    From this “paste” and the remaining ingredients, we make a soft dough and let it rest for at least 1 hour.
    Roll it out to 3 mm and cut out star shapes.
    Bake at 170°C for about 12 minutes. Decorate the surface of the baked cookies with orange icing and half an almond.

    Tip: You can also add a pinch of cinnamon to the dough.
