Stir the eggs, sugar and cooking oil in a food processor. Add the curd (choose soft or creamy - they have a higher protein content), white yogurt and grated lemon zest
Blend the dry ingredients - flour, salt, baking powder and whole poppy seeds - in a bowl and stir into the mixture.
Stuff the prepared batter into muffin cups, paper or permanent. Place in an oven preheated to 160 °C and bake for 10 minutes. Then raise the temperature to 180 °C and bake for approx. another 15-20 minutes. You can also throw in a few nuts or raisins into the batter.
