Spelt quiche with peas and feta is a healthy and tasty dish, ideal as a light lunch or dinner. The combination of peas and feta brings a refreshing taste. Try it!
Process the cold butter, plain flour, salt and ice water in a food processor with a whisk until it forms a compact substance. Place the dough in the fridge for at least 30 minutes.
Roll out the dough and press into the pie pan, then refrigerate again for at least 30 minutes. Place baking paper on top of the dough and weigh it down with beans.
Bake in a preheated oven at 150 °C for 20 minutes.
Preparing the filling: Fry the onion cut into semi circles in butter until it turns glassy. Add a tablespoon of sugar and salt, lightly caramelise. Set the onion aside and pour in the cream, add 2/3 of the peas, beaten eggs and ricotta. Season with salt and pepper.
Pour the mixture over the pre-baked dough. Top with about 150 g of crumbled feta and sprinkle with the remaining peas.
Bake at 150 °C for about 45 minutes.
Once baked, let the quiche cool, then garnish with the remaining feta, rocket or herbs.
