Breakfast crackers with spinach and feta

Discover a quick and soft gluten-free recipe for salted cookies, which, thanks to Nomix gluten-free flour, is perfect for an everyday breakfast or snack. Directions

  1. Preheat the oven to 190°C (375°F) and line a baking tray with parchment paper.
  2. Finely chop the onion and sauté it in 1 teaspoon of oil until translucent. Add the spinach and cook until wilted.
  3. In a mixing bowl, whisk the eggs, then add the cottage cheese, almond flour, NOMINAL gluten-free flour, dried garlic, salt, and pepper. Mix well.
  4. Finally, fold in the crumbled feta cheese and the onion-spinach mixture. Stir until a thick batter forms.
  5. Using an ice cream scoop, form six mounds of the mixture on the prepared baking tray. Sprinkle with additional feta cheese and bake for 15 minutes, or until golden brown.
  6. Allow to cool completely, then store in an airtight container.
