Cereal porridge with chia jam & homemade granola

Nomina Tasty porridge and granola with chia jam? This is what a great breakfast or snack can look like.  

Directions

  1. Prepare the porridge following the instructions on the box and stir in the curd and flaxseed oil. 

  2. Simmer the fruit with a little sweetener, stir in the chia seeds and let cool. 

  3. Homemade granola: Mash the ripest possible bananas and mix in a bowl with the remaining ingredients except the chocolate: with the melted coconut fat, flakes, coconut chips, ground flax, pumpkin, sunflower and chia seeds, chopped raisins, cinnamon and salt. Spread the mixture on one or two large baking trays lined with baking paper and smoothen the surface. Bake in a preheated oven at 150 °C for about 40 minutes. After 10 to 15 minutes, break the mixture into pieces using a wooden spoon and stir. Check continuously to make sure it doesn't burn. Once out of the oven, immediately mix with the chopped chocolate, let cool on the baking tray until the next day and store in a sealed container. The granola will last at least 2 weeks. 

  4. Place the granola at the bottom of a canning jar, top with the porridge and chia jam, garnish with fresh fruit to taste and seal. Store in the fridge or in a cooler bag until serving. 

Tip: You can replace the pumpkin and sunflower seeds with a similar weight of chopped nuts (hazelnuts, pecans, almonds).
