200 g Nominal wholegrain spelt flour
150 g grated courgette
2 eggs
10 ml olive oil
1 small clove of garlic
2 g baking powder
60 g grated cheddar cheese
pinch of salt
Grate the young courgette on a fine grater and season with a pinch of salt. Finely grate the cheddar cheese as well. Mix the baking powder with the flour and then stir all the ingredients together. Season with a pressed garlic clove, a little pepper and, if you like, chopped herbs.
Stuff the prepared dough into muffin cups, paper or permanent. Place in the oven preheated to 180 °C and bake for 30-35 minutes. The recipe is suitable as a snack for school or work, ideally accompanied by pieces of fresh vegetables and fruit.
