Gluten-free Easter mazanec is a fragrant and festive classic in a gluten-free version that can be enjoyed not only at Easter. Thanks to its soft dough, lemon zest, raisins, and almonds, it has a rich flavor and a lovely aroma. The recipe is easy to prepare, and the result is a fluffy round loaf with a golden crust that makes a perfect addition to the festive table or an afternoon coffee break.
300 g NOMIX gluten-free flour
165 ml water
1 beaten egg
65 g sugar (including vanilla sugar)
50 g oil (or melted butter)
13 g fresh yeast
2.5 g salt
grated lemon zest
approx. 150 g raisins and candied citrus peel
coarsely chopped almonds
a handful of sliced almonds for decoration
Mix all the dough ingredients together at once. The consistency of the dough develops gradually, so adjust it to the desired texture only after 7 to 10 minutes of kneading. Add the raisins, candied citrus peel, and almonds last. Wash and dry the raisins before using them.
Let the dough rest for about 5 to 10 minutes, then immediately shape it into a round loaf. To make shaping easier, lightly grease the kitchen counter and work the dough with greased hands.
Protect the loaf on the baking tray from drying out on the surface and let it rise for about 50 minutes.
Before baking, brush the surface with beaten egg and sprinkle with sliced blanched almonds.
Bake at 170 °C for about 35 minutes. If the top seems to be browning too quickly, cover it in time with baking paper.
