Savory Chickpea Porridge with Roasted Carrots and Honey-Mustard Dressing

Chickpea porridge does not have to be just a sweet breakfast. Combined with roasted carrots, walnuts, seeds, feta, and a honey-mustard dressing, it becomes an easy, balanced savory meal you can enjoy at any time of the day.

Nominal Chickpea Porridge is naturally gluten-free and vegan. It is rich in plant-based protein and fibre, and because it contains no added sugar, milk, or flavourings, it makes a great base for both sweet and savoury recipes. You can enjoy it not only as a quick porridge, but also in spreads, mixtures, or smoothies.

 

  1. Preheat the oven to 180 °C with top and bottom heat.

  2. Peel the carrots. If they are larger, cut them into smaller pieces. Peel the onion and cut it into quarters.
  3. Place the carrots and onion in a baking dish, season with salt and pepper, add marjoram, rosemary, and olive oil. Mix everything well and bake for 60–90 minutes, until the carrots are tender.
  4. Meanwhile, prepare the dressing. In a small bowl, mix the mustard, honey, lemon juice, olive oil, salt, and pepper.
  5. Pour hot water into a larger bowl and gradually stir in the Nominal Chickpea Porridge until you reach the desired consistency. Season lightly with salt to taste.

  11. Our tip

    If you would like to make this recipe fully plant-based, simply leave out the feta and honey. You can season the dressing with mustard, lemon juice, and a splash of good-quality olive oil.

  12. Spread the porridge onto a plate, add the roasted carrots and onion, then sprinkle with walnuts, feta, sesame seeds, and hemp seeds. Finally, drizzle with the prepared dressing.
