Savoury spelt pancakes with spinach and wild garlic

Delicious savoury pancakes are a great way to use fresh spinach and wild garlic. They are easy to prepare and great as a light lunch or dinner. Filled with a tasty filling of fresh cheese and sour cream, they will please any healthy food lover. 

 

Directions

  1. Place all ingredients (spinach, spelt flour, milk, eggs, salt, pepper and onion) in a blender and blend into a smooth batter. 
  2. Heat a little oil in a frying pan and fry the pancakes until golden on both sides. 
  3. To prepare the filling, blend the fresh cheese, sour cream, salt, pepper, wild garlic and spring onions in a blender until smooth and easy to spread. 
  4. Spread the filling over the pancakes, wrap and serve with fresh vegetables.
