Savoury spinach roulade

Green light for spring! This is our savoury spinach roulade made from spelt flour. Enjoy! 

Directions

  1. Separate the eggs into whites and yolks. In a bowl, whisk the egg whites until stiff to form foam.

  2. In a larger bowl, stir in the spinach, egg yolks, flour, crushed garlic, pepper and salt. 

  3. Gently add the egg white foam into the spinach mixture and mix carefully. 

  4. On a baking tray lined with baking paper, spread the mixture into an even sheet and bake in a preheated oven at 180 °C for about 15 minutes, until the roulade is golden in colour. 

  5. Once baked, carefully remove the sheet from the baking tray and roll up while still hot. Let cool. 

  6. Preparing the filling: place all the ingredients for the filling into a bowl (the Gervais, cream, sour cream, salt, pepper and herbs) and whisk together until smooth. If the filling is too stiff, you can add a little milk or water. 

  7. Once cooled, carefully unroll the roulade, spread the prepared filling on it and roll it up again. 

    Serve sliced and enjoy a tasty snack!
