125 g plain wheat flour
85 g Nominal wholegrain spelt flour
70 g powdered sugar
140 g butter
1 egg yolk preserve
lemon zest from 1/2 untreated lemon
Mix the tempered ingredients and knead into a smooth dough. Let rest in a cool place for at least 1 hour. Roll out the dough into a 3 mm thick sheet and cut out shapes, always two of a kind, the top one with a hole. Bake at 170-180 °C for about 13 min until lightly pink. After cooling, bind with spicy (e.g. currant) jam.
Our tip: You can also bind the biscuits with other types of cream. The dough can be used for Linzer cupcakes. You can also flavour the base dough with a tablespoon of cocoa. If you want to bake with cane sugar and you only have granulated sugar, it is no problem to grind it into fine powder in a blade coffee grinder.
