From the ingredients for the recipe, take yeast, 1 tsp sugar, 3 tsp flour and a little lukewarm water. Stir together. This will form a starter, which we let rise.
Prepare the flour, salt, melted butter and the remaining sugar in a bowl. Add the starter, gradually pour in the lukewarm water and stir. Adjust the amount of water to the binding of the flour. It isn't necessary to use all of it. Knead the dough thoroughly, cover it with a dish towel and let rise for about 1 hour.
Prepare a hot soaking bath of 1 litre of water in a saucepan, bring to the boil and then very carefully pour in 50 g of soda. Put the seeds for the topping or coating into a bowl.
Turn the dough out onto a pastry board. First, press through and squeeze out the gas, then divide into even pieces (size to taste). We chose about 70 g. Round each piece a little, use a pin to roll out into a thinner oblong patty and form a roll shape from it.
Let the rolls rest for a while, then place 2-3 pieces at a time in the simmering bath. Leave in the bath for about 30 seconds and turn over (they float). Once removed from the bath, let drain, then you can directly "dip" them in the seeds or move them to a baking tray lined with baking paper and sprinkle.
Bake at 240 °C for about 15 minutes. Make about 6 pieces from this batch.
