Zucchini patties with chickpea porridge Nomina

We believe that the best we can offer ourselves and our loved ones often comes from the most ordinary ingredients, if we devote our time and care to them. These fragrant patties are a beautiful example of how easy it is to create a complete meal full of energy, especially when our honest chickpea porridge provides a solid and healthy base.

1. We will start our joint preparation by coarsely grating the zucchini, lightly salting them and letting them rest for at least half an hour. During this time, they will release excess water, which we will then squeeze really thoroughly. This step is the secret to beautifully crispy patties.

2. Add finely grated potatoes, both eggs, crushed garlic and fragrant fresh thyme to the squeezed zucchini. Gently enliven the mixture with a drop of lemon juice, add hemp seeds and mix everything with love.

3. Now comes the time for our chickpea porridge. Pour it into the prepared vegetable mixture and mix it thoroughly one last time. Let the finished dough rest for about half an hour so that all the flavors can combine and the porridge will firm up the dough beautifully.

4. Using a spoon, form small, neat patties from the rested dough and lightly fry them in melted butter on both sides until golden brown.

5. While the patties are cooling, prepare the dip. Mix the sour cream with the pressed garlic, a teaspoon of honey mustard and chopped chives. Season lightly with salt and pepper to taste.
