Extra soft and fluffy doughnuts made with cottage cheese and NOMINAL fine spelt flour. Thanks to the spelt flour, they contain more fibre and minerals while still tasting like classic bakery doughnuts. You won't even notice the cottage cheese! This recipe was created for us by the wonderful Lžička cukru.

Blend the cottage cheese until completely smooth – this step is essential for achieving a soft dough and a tender texture.
Add the ground vanilla, baking powder, and NOMINAL fine spelt flour to the blended cottage cheese. Mix everything together with a spoon or spatula until the ingredients are roughly combined.
Transfer the dough to a work surface and knead it briefly into a soft, slightly sticky dough. If it is too sticky to shape, add a small amount of flour.
Lightly moisten your hands with water and shape the dough into 7 small doughnuts.
Spray the air fryer rack with cooking oil, place the doughnuts on it, and lightly spray them with oil as well. Bake at 180 °C for about 10 minutes, or until golden brown.
Let the doughnuts cool for a few minutes. Then dip each one into the melted butter and coat it in the cinnamon sugar.
They are best enjoyed while still slightly warm, when they are at their softest and most fragrant.
Tip: Don't have an air fryer? You can also bake the doughnuts in a conventional oven with the fan setting at 180 °C for about 12–15 minutes.
