Spelt buns with wild garlic

Spring brings wild garlic to the forest and we love to bring it straight to the kitchen. These soft spelt buns are fragrant, fluffy and full of natural flavor. The combination of white and whole wheat spelt flour gives them softness and nutrition at the same time - and the garlic butter inside makes every bite a little feast. They go great with soup, salads or just with good butter. The recipe was prepared for us by Veronika Jansová - Tastykitchen.

Directions

  1. Mix the lukewarm milk with the sugar, spelt flour, and dried yeast. Let it rest in a warm place for 10–15 minutes, until the starter becomes foamy and develops a pleasant aroma.

  2. In a large bowl, combine both flours, salt, and sugar. Add the yogurt, melted butter, milk, and the activated yeast mixture. Knead until you have a smooth, elastic dough, then gently work in the chopped wild garlic.

  3. Spelt dough is usually softer and may be slightly sticky. Avoid adding too much extra flour so that the rolls remain soft and tender.

  4. Cover the bowl with a kitchen towel and leave the dough to rise for about 1 hour, or until it has roughly doubled in size.

  5. Mix the softened butter with the salt and chopped wild garlic. Set aside.

  6. Divide the risen dough into 10–12 roughly equal pieces. Shape each piece into a round roll and place them on a baking tray lined with parchment paper.

  7. Allow the rolls to proof on the tray for another 20–30 minutes.

  8. Cut a cross into the top of each roll, brush with beaten egg, and place a teaspoon of the garlic butter filling into the cut. Bake in a preheated oven at 180°C (355°F) for about 20–25 minutes, or until golden brown.

    Our tip: After baking, let the rolls cool briefly on a wire rack. They taste best while still slightly warm, when the garlic butter is wonderfully fragrant and melted.
